Jumbo Salted Double Dark Chocolate Cookies

Chocolate. Yes you will see a lot of chocolate recipes around here and the more the better. Double chocolate? Yes please! Maybe I should try to come up with a recipe with the most different kinds of chocolate I can find....Octuple Chocolate cookies! Ok I am taking on this challenge! But In the mean time I think I will share this recipe.

My rugged woodsman doesn't like salted sweets (but he does like the sweet and salty combo....I don't understand it either), so if you feel the same way just reduce the salt to 1/4 tsp and use a fine grain.

Makes 10 (but let's be real...we ate 4 cookies worth of dough while waiting for the first tray to bake)
1/2 cup butter, softened
1 cup brown sugar
1/2 tsp vanilla
1 Tbsp instant coffee [or espresso]
1 egg
1/2 cup cocoa
1/4 cup Dutch processed cocoa*
3/4 cup all-purpose flour
1/2 tsp baking soda
1 tsp coarse grain sea salt
3/4 cup semi-sweet chocolate chips
In a large bowl, cream butter, brown sugar, and vanilla together until light and fluffy.
Mix in the egg.
Stir flour, cocoas, salt and baking soda together. Add to butter mixture and stir until well blended.
Stir in chocolate chips.
Divide dough into 10 balls. Bake on a parchment lined cookie sheet in a preheated oven at 350f for 14 minutes.
Cool and enjoy.
*dutch processed cocoa is extra dark because it it treated with an alkali. You can purchase it at bulk barn as "Rudy red cocoa". You can also substitute regular cocoa if you so desire.
