Truffle Parmesan Roasted Chickpeas


Delicious and healthy, packed with protein. Crunchy. Salty. What's not to love?
This is a recipe for people who like quick and easy with not much work. So lets keep this post simple and short.


2 14oz cans of chickpeas, rinsed and drained
4 tsp truffle oil (or olive oil)
1/2 cup freshly grated Parmesan cheese
1 tsp fine grain sea salt

Preheat oven to 385f. Line a rimmed baking sheet with parchment paper. Thoroughly mix all ingredients together. Spread chickpeas out on tray in a single layer. Bake 45 minutes, stir every 10 minutes. Cool. Eat.
